# Expert Advice:

01 -
  • The natural sugars in these vegetables create a caramelization that feels like youve done something fancy when really you just let the oven do the work
  • Its the kind of side dish that disappears first at dinner parties even from people who swear they dont like beets
02 -
  • Crowding the pan is the fastest way to end up with steamed vegetables instead of roasted ones
  • The beet will bleed onto everything else if youre particular about keeping colors separate toss them in their own bowl first
03 -
  • Cut your vegetables into uniform sizes so everything finishes cooking at the same time
  • Let the pan sit in the hot oven for at least 10 minutes before adding vegetables for an extra crispy bottom
